The Original Recipe A few weeks ago my thirteen year old son Evan was tasked with creating a two course meal as part of a Scout’s challenge.  Being a little competitive, (anyone knows who he could possibly take after?) he decided to go one better.  Yep, enter a three course meal.  We needed to think of something which was relatively straightforward but would still end up in a delicious three course meal for four.  We decided early on that he would make our Chicken Tomato and Feta Pasta as his main and for dessert he chose our Biscoff Blondies.  The starter however was proving a little more difficult.  Whilst walking around Morissions, still with no idea on what he would make he kept telling me about the crispy bread we get in restaurants.  I showed him breadsticks and crispbreads but apparently this is not what he had in mind.  In the end, he decided to make a simple but delicious bread roll he had made in school previously.  The original recipe calls for a two-hour proving time to allow the dough to rise properly. However, my son insisted that they skipped the proving time entirely and still ended up with delicious bread. Sceptical but curious, I decided to give his method a try. Adding a Gourmet Twist Being a tad bit competitive, Evan couldn’t just bake a basic bread roll. So, with a little bit of creativity we ended up elevating a basic recipe to a gourmet experience with the addition of sundried tomatoes and Kalamata olives.  These additions not only add bursts of flavour but also create a beautiful, rustic appearance. The Verdict To my surprise (given the lack of proving) the bread turned out to be absolutely delicious. The crust was perfectly crispy, and the inside was soft and packed with the rich flavours of sundried tomatoes and kalamata olives. The bread had a beautiful texture despite skipping the proving time. Pairing this bread with our chicken and feta pasta was a match made in heaven. The salty tang of the feta, the tender chicken, and the vibrant Mediterranean flavours of the bread complemented each other perfectly, creating a meal that felt like an indulgence but was incredibly easy to make. New Family Favourite My son’s school bread recipe, enhanced with sundried tomatoes and kalamata olives, has become a new family favourite.
