Comfort in Every Bite

For children, mashed potatoes are often an introduction to solid foods. Their soft, smooth texture makes them easily palatable and digestible for young ones. The familiar taste and simplicity offer a sense of comfort, making mashed potatoes a go-to meal for parents.

During illness, when the body craves something light yet nourishing, mashed potatoes become a gentle source of sustenance. Their easy-to-digest nature, combined with the energy from the potatoes, provides comfort and solace during times of sickness.

Elevating the Simple Spud

Beyond their role as a comfort food, mashed potatoes possess incredible versatility. While they shine as a simple and satisfying dish, they can also be elevated to grace any table for diverse occasions.

The journey from simple to sensational begins with the right ingredients and technique. Incorporating butter, cream, or milk, and various seasonings can transform mashed potatoes from a basic side to a rich, flavorful delight. Herbs like rosemary or chives, and the addition of garlic or cheese, can elevate the taste profile, adding layers of complexity to the dish.  Our mashed potato casserole will soon be one of your favourite side dishes.

Cooking time

  • 1100g Russet potatoes

  • Salt to taste

  • 180ml milk

  • 115g unsalted butter

  • 225g cheese (I use a mix of Cheddar and Mozzarella)

  • 225g bacon

  • 2 tablespoons spring onions

  • Boil potatoes over a medium to high heat in seasoned water.  Cook until you can pierce the potatoes with a knife.  Using a colander, drain the potatoes.
  • Add the milk and butter to a small saucepan, cooking until the butter has fully melted.  Add the cream cheese, whisking until fully combined then add to the potatoes.
  • Mash the potatoes until creamy.  Add to a Pyrex dish.
  • Air fry the bacon until golden brown.  Cut into small pieces and add to the top of the mashed potatoes.
  • Top the potatoes with the grated cheese and bake at 190℃ (375℉) for 15-20 minutes
