Mashed Potato Casserole

1100g Russet potatoes
Salt to taste
180ml milk
115g unsalted butter
225g cheese (I use a mix of Cheddar and Mozzarella)
225g bacon
2 tablespoons spring onions
Directions
- Boil potatoes over a medium to high heat in seasoned water. Cook until you can pierce the potatoes with a knife. Using a colander, drain the potatoes.
- Add the milk and butter to a small saucepan, cooking until the butter has fully melted. Add the cream cheese, whisking until fully combined then add to the potatoes.
- Mash the potatoes until creamy. Add to a Pyrex dish.
- Air fry the bacon until golden brown. Cut into small pieces and add to the top of the mashed potatoes.
- Top the potatoes with the grated cheese and bake at 190℃ (375℉) for 15-20 minutes
