Ingredients

  • 1100g Russet potatoes

  • Salt to taste

  • 180ml milk

  • 115g unsalted butter

  • 225g cheese (I use a mix of Cheddar and Mozzarella)

  • 225g bacon

  • 2 tablespoons spring onions

Directions

  • Boil potatoes over a medium to high heat in seasoned water.  Cook until you can pierce the potatoes with a knife.  Using a colander, drain the potatoes.
  • Add the milk and butter to a small saucepan, cooking until the butter has fully melted.  Add the cream cheese, whisking until fully combined then add to the potatoes.
  • Mash the potatoes until creamy.  Add to a Pyrex dish.
  • Air fry the bacon until golden brown.  Cut into small pieces and add to the top of the mashed potatoes.
  • Top the potatoes with the grated cheese and bake at 190℃ (375℉) for 15-20 minutes
