Chocolate Mousse

I absolutely love the days which celebrate food.  I especially adore those days in celebration of sweet treats and chocolate!  And, today is one of those days as we pay homage to chocolate mousse on National Chocolate Mousse Day.

Chocolate mousse is, in my opinion, an absolute delectable treat.  I love its creamy texture and rich chocolate taste.  In today’s blog we will explore a traditional recipe, but, if you have an egg allergy or prefer an egg free and super easy (but equally delicious) version, check out our eggless version here.

Chocolate Mousse

Delicious traditional chocolate mousse

Ingredients

  • 225 grams of good quality dark chocolate, finely chopped

  • 4 large eggs, separated

  • 50 grams granulated sugar

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 240 ml heavy (double) cream

Directions

  • Melt the chopped chocolate in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let it cool slightly.
  • In a separate bowl, using Hand Mixer or Stand Mixer, beat the egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate and vanilla extract until well combined.
  • In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
  • Gently fold the beaten egg whites into the chocolate mixture until no streaks remain.
  • In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until smooth and well combined.
  • Divide the chocolate mousse among serving dishes and refrigerate for at least 2 hours, or until set.

Notes

  • Serve chilled, garnished with chocolate shavings or fresh berries if desired.
  • White Chocolate Mousse – Substitute white chocolate for dark chocolate in the classic recipe adjusting the sugar to taste
  • Nutella – Incorporate 1/2 cup of Nutella into the classic recipe mixing well before adding the egg yolks
  • Mint Chocolate Mousse -Add 1 teaspoon of peppermint extract to the melted chocolate mixture and proceed with the recipe as usual
  • Raspberry Chocolate Mousse – Puree 1 cup of fresh raspberries and fold into the chocolate mousse mixture before refrigerating
  • Coffee Chocolate Mousse – Dissolve 1 tablespoon of instant coffee granules in 2 tablespoons of hot water, then add to the melted chocolate mixture before combining with the egg yolks
