  • 85g butter

  • 200g low-fat soft cheese

  • ½ tsp vanilla extract

  • 225g granulated sugar

  • 2 eggs

  • 3 tsp cocoa powder

  • 100g self-raising flour

  • Fudge Frosting
  • 55 g butter

  • 1 tbsp milk

  • 75g icing sugar

  • 2 tbsp cocoa powder


  • Preheat the oven to 180℃(360℉) and grease and line a brownie baking tin with parchment paper.
  • Preheat the oven to 180℃(360℉) and grease and line a rectangular baking tin with parchment paper.
  • Beat the eggs and remaining sugar until light and creamy.
  • Heat the butter and 3 teaspoons of cocoa powder, stirring until there are no lumps.
  • Add the cocoa powder and butter mix to the eggs and mix to combine.
  • Sift the flour and baking powder and fold into the mix.
  • Add half of the chocolatey mix to the tin and smooth out.
  • Add the cream cheese mix and then top off with the remaining chocolate mix.
  • Bake for 40-45 minutes.
  • Once ready, allow the brownie to cool in the tin.

  • Sift the icing sugar and cocoa powder and add to the pan.
  • Spread the icing onto the brownies and enjoy 🙂


  • If you are going to make our Christmas tree or Christmas hat brownies omit the fudge frosting.

Whilst these brownies are perfect all year through, at Christmas time you can customise them to the Christmas theme.  Elevate your Christmas treats by turning an ordinary brownie into festive masterpieces.  Gather the little ones and transform these chocolate wonders into Christmas trees or hats.  It’s an easy and enjoyable activity that adds a personal touch to your Christmas celebrations.  They also make a perfect treat for Santa who I am reliably informed LOVES chocolate brownies!

Once you have allowed your brownies to cool in the tin, transforming them into Christmas trees is so easy.  Just follow these simple steps:

  1. Cut the brownies into triangles.
  2. Use green icing to created a tree shape on each brownie.
  3. Decorate with colourful sprinkles as ornaments.
  4. Top it off with a dusting of icing sugar for a snowy effect.

Christmas Hats

If you prefer making a Christmas  hat treat for the big man the transformation is just as easy

  • Cut the brownies into triangles.
  • Add a layer of red for the top part of the Christmas hat.
  • Use a small amount of white icing for the fluffy trim.
  • Place a mini marshmallow on the tip of the brownie for the classic Santa hat look.
