Easy To Make And Even Easier To Eat!

And the best part? These Biscoff blondies are incredibly easy to make.  In fact, they are so easy that my thirteen year old was the first one to give these a whirl last weekend.  Tasked to cook a two course meal for four as part of his scouts activities, Evan wanted to go the whole hog and give us a three course meal.  We came up with this Biscoff blondie.

Ingredients

  • 225g unsalted butter, melted

  • 200g light brown sugar, packed

  • 100g cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 250g plain (all-purpose) flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 250g Biscoff spread

  • 60g Biscoff cookies, crushed (optional but highly recommended)

Directions

  • Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • In a large mixing bowl or Kitchen Aid, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the Biscoff spread until evenly distributed throughout the batter. If desired, gently fold in the crushed Biscoff cookies for added texture.
  • Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  • Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.  If you find that your blondies are still very jiggly, bake for another 5 minutes.  Do be careful not to overbake them though as they will continue to cook whilst cooling in the pan.
  • Allow the blondies to cool completely in the pan before slicing and serving.
